Nicholas Gilman is a New York-born food writer and culinary researcher who has lived in Mexico City since 1998. His parents were drama critic Richard Gilman and Esther Gilman. After a long career as a classically trained painter, he became a food writer, chef and journalist. He has dedicated his career to showcasing everything from humble street stalls to the city’s most refined dining experiences.
He is the author of the critically acclaimed guide Good Food in Mexico City: Food Stalls, Fondas, and Fine Dining. Gilman has contributed to leading international publications, including The Guardian, Saveur, The New York Times, Los Angeles Times, New York Magazine, Travel + Leisure, Food & Wine, Condé Nast Traveler, The Christian Science Monitor, Surface Magazine, and National Geographic. In addition to his writing, he is an active voice on social media, where he shares insights, reviews, and photography from Mexico and beyond.
